Easy Edamole

Guacamole’s Cooler Cousin

This is an easy substitute for guacamole that’s packed with protein and fiber while ditching all the fat & calories. Serve with your favorite whole grain chip or fresh veggies or use as a spread on sandwiches instead of mayo.

This recipe was inspired by a fresh guacamole that was made at the table on a trip to San Antonio, Texas. I loved that they used fresh orange juice. It gives it a delicious, citrusy taste using lime and orange.

Makes 8 (1/4 cup) portions

Ingredients

If you like a chunky salsa or guac, chop the red onion, tomatoes, & cilantro and, stir in after the edamole is blended. Or, blend all the ingredients for a smooth edamole.

Not a cilantro fan? Sub in parsley for the cilantro.

INGREDIENTS

  • 2 cups shelled edamame

  • 4 ounces silken tofu

  • Juice from one medium orange

  • Juice from one lime

  • 1/4 tsp. salt

  • 2 tablespoons water

  • 1 tablespoon minced garlic

  • 1 tablespoon canned diced green chilis or chilis in adobo sauce

  • 1/2 cup chopped red onion

  • 1/2 cup chopped tomato

  • 2 tablespoons chopped cilantro

Directions

        1. Blend edamame, silken tofu, orange and lime juice, salt, garlic, and chilis in a food processor.

        2. Add water as needed to blend thoroughly until smooth.

        3. Remove mixture from processor and place into small bowl.

        4. Stir onion, tomato, and cilantro into edamole. Salt to taste.

Hints

  • Serve with your favorite whole grain chip or fresh veggies.

  • Use as a spread on sandwiches instead of mayo.

  • Add a little hot sauce or more chilis for a little zing!
