Everybody loves a delicious donut.
In this recipe, donuts meet healthy.
We’ve remixed a traditional donut recipe to provide you with a higher fiber, lower fat..sugar…calorie option to your beloved treat. Introducing glazed cake donuts.
This glazed cake donut recipe calls for whole wheat pastry flour to add a little whole grain to your life. The eggs have been replaced with aquafaba (the drained liquid from chick peas) or you could use a plant based egg substitute like Just Egg. Applesauce is subbed in for butter. These little babies are baked and result is nutritious and delicious option to the classic fried cake donut.
Glazed Cake Donuts Ingredients
1 cup whole wheat pastry flour (or use Bob’s Red Mill Gluten Free Flour)
1/4 cup of a stevia based baking blend
1 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon pure vanilla extract
1/4 cup aquafaba (liquid drained from chick peas)*
1 tablespoon applesauce
2/3 cup skim milk (or nondairy milk to make them vegan)
*The aquafaba is used as a replacement for 2 egg whites. Another substitute: 1 tablespoon flaxseed mixed with 3 tablespoons water. Let sit for 10 minutes until it becomes gelatinous.
Glazed Cake Donuts Directions
Preheat oven to 350F degrees
Spray donut pan with a baking spray with flour
Mix – flour, sugar blend, cinnamon, salt, baking powder and baking soda in a large mixing bowl.
In a smaller bowl, gently whisk together aquafaba, applesauce, milk, and vanilla.
Stir wet mixture into the dry ingredients.
Fill donut pan until each is about 3 quarters full. Avoid overfilling.
Bake for 14-17 minutes. Donuts should be golden brown and an inserted toothpick should come out clean.
Place donuts out onto a wire rack to cool and allow to cool for 10-15 minutes.
Top with your favorite toppings: cinnamon and stevia sugar blend, powdered sugar, vanilla bean glaze (recipe below), melted chocolate, strawberries, edible flowers, crystalized lemon zest.
Mix ins: 1/4 cup of...mini chocolate chips, lemon zest/juice, blueberries, or strawberry puree
For a vanilla glaze, mix 1/2 cup of powdered sugar, 1 teaspoon skim milk and a splash of vanilla extract. Stir until smooth. Add food color to make a little pop of color. You can make different flavors by using different extracts, lemon or lime juice/zest. Make it your own!
To glaze, wet your fingers with a little water and run it over the tops of the donut lightly and, dip it in your favorite topping.
