Easy Edamole

This is an easy substitute for guacamole that’s packed with protein and fiber while ditching all the fat & calories.

Ingredients

Scale

2 cups shelled edamame

4 ounces silken tofu

Juice from one medium orange

Juice from one lime

1/4 tsp. salt

2 tablespoons water

1 tablespoon minced garlic

1 tablespoon canned diced green chilis or chilis in adobo sauce

1/2 cup chopped red onion

1/2 cup chopped tomato

2 tablespoons chopped cilantro

Instructions

  1. Blend edamame, silken tofu, orange and lime juice, salt, garlic, and chilis in a food processor.
  2. Add water as needed to blend thoroughly until smooth.
  3. Remove mixture from processor and place into small bowl.
  4. Stir onion, tomato, and cilantro into edamole. Salt to taste.

Notes

Use

A great substitute for traditional guacamole. Lower in fat & calories while being packed with protein & fiber. Use as a spread on sandwiches instead of mayo.

Serve With

Serve with your favorite whole grain chip or fresh veggies.

Don’t Like Cilantro

Sub in parsley for the cilantro.
