When you are looking for something to satisfy you sweet tooth and primal need for ice cream, this fits the bill.

Ingredients

Scale

2 cups frozen mango chunks

1 cup frozen pineapple chunks

6 ounces pineapple orange juice

1/2 cup fat free half-n-half (or plant based milk like oat milk, Silk unsweetened coconut milk)

1/2 tsp coconut extract

Instructions

Using a high powered blender, blend all ingredients until smooth. Consistency can be adjusted from thin like a smoothie to like a soft serve ice cream for a quick treat.

Notes

  • The Mango Soft Serve can be frozen hard in a 8 x 8 pan and scooped for later use.
  • Put your own signature on it by whipping up different variations by using other frozen fruits and choosing complimentary juices.
